You all follow me on Twitter, so you see all the time that I just want to sleep or bathe in hand sanitizer. I can not see how it could go wrong to do both at the same time. NEW LIFE GOAL.
My New Year's resolutions were as follows: 1) make more healthy choices, 2) exercise twice a week, and 3) cook at home more.
I've been successful this first week, which is SUPER HARD since my schedule is pretty much this every single day: go to work 9-5, come home for an hour to frantically eat, go to rehearsal from 6:30 - 10:00pm. Do all my rehearsal and work related emails. Get to bed by midnight. Then, repeat! Sundays, the one day I don't have work nor rehearsal, I am still frantically doing things for a show, but I also cook in the afternoon for the week. I figure, if I can make myself cook regularly when I am at my most insane, I can do it when I have more free time no problem!
This week was raviolis and plain pasta in a tomato basil sauce. Some fried shrimp because they are easier to keep for a few days in the fridge. Tom yum chicken noodle soup, which is pretty much "what fresh veggies do I have? PUT IT IN" with tom yum paste. Then, these delicious things:

I made some alterations. I got pastry shells instead of sheets, so I ended up making 6 individual tarts. This worked out GREAT since I then had a controlled amount of tasty that I knew the exact calorie count for. It makes a great breakfast or lunch at around 360 calories without having to send the time to make out all the dough (which I love baking but don't have time this week to wait for dough to rise).
I think I might torture the book in the face, and over here on the blog space, with "what I cooked this week" for a bit and see if that helps keep me more honest about cooking. I am hopeful! I love cooking but convince myself I never have time.
